Lettuce Eat salad restaurant files building permit

The owners of new fast casual restaurant Lettuce Eat have taken out a $75,000 building permit to renovate a space in the Germantown area ahead of a target opening date of Feb. 1.
Lettuce Eat LLC owner Kelcie Hamm Allen said she will receive bids Tuesday for the renovation of the 1,975-square-foot space at 6641 Poplar Ave., Suite 106, next to Swanky’s Taco Shop in Carrefour Shopping Center.
We first reported in September her plans to open the restaurant, which will focus on selling healthy salads and wraps.
In the building permit filed with Germantown, Cannon Austin & Cannon is listed as the landlord and Scot Woodard is listed as the architect.
Allen, who had previously floated the idea of a second shop in Midtown Memphis, said an expansion could be a year or two away if the first restaurant is successful
